What better way to start Christmas Day than with these cute Santa pancakes topped with a whipped cream beard, pomegranate hat and chocolate nose. You can experiment with fruits for the hat; strawberries and raspberries would also work well. See method

Ingredients

  • 135g self-raising flour
  • 1 tsp baking powder
  • 2 tbsp caster sugar
  • 150ml semi-skimmed milk
  • 1 large egg
  • 2 tbsp sunflower oil, plus extra for greasing

For the decoration

  • 2 tbsp golden syrup
  • 60g pomegranate seeds
  • 150ml whipping cream
  • 6 small blueberries, halved
  • 6 pink sugar-coated chocolates
No self-raising flour? Add 2 tsp baking powder for every 150g plain flour

Method

  1. Sift the flour and baking powder into a bowl. Add the caster sugar and a pinch of salt, then mix to combine. Make a well in the middle. 
  2. In a jug, beat together the milk, egg and oil until well combined. Pour into the well. Beat with a fork or whisk until it forms a thick, smooth batter. 
  3. In a nonstick frying pan set over a medium heat, heat a little oil. Add a small ladleful (about 60ml) of batter, tilting the pan to spread the batter into a circle about 9-10cm in diameter. If your pan is large enough, add a second circle of batter. When the top of the pancake starts to bubble, flip the pancake and continue cooking until both sides are golden. Repeat until all the batter is used up. 
  4. Working one at a time, brush the top third of each pancake with golden syrup and then decorate all of this third with a layer of pomegranate seeds. 
  5. Whip the cream until medium peaks form, then transfer to a disposable piping bag fitted with a medium star nozzle. Pipe in star shapes to create a hat trim, a hat bobble, a beard and moustache. Brush the backs of two blueberry halves with golden syrup and put in position for eyes. Put a pink sugar-coated chocolate in the centre for a nose. Repeat with remaining pancakes and ingredients.
