Give your garlic bread a lift by mixing pesto and chopped basil into the garlic butter, then pop it on the barbecue for a winning dish the whole family will love.
In a small bowl combine the softened butter, pesto, crushed garlic and chopped basil. Make 1-inch thick slices into the bread, but do not go all the way through, just to the bottom crust. Put a teaspoon or two of the butter mixture between each slice.
Wrap the bread in aluminum foil and place on the barbecue for 12-15 minutes. Unwrap and serve.
Tip: To cook this in the oven rather than on a barbecue, preheat the oven to gas 6, 200°C fan 180°C and place the foil parcel on a baking tray for 15 minutes. Remove, unwrap and serve.
