Ingredients

  • 2 English Breakfast tea bags
  • 6cm piece of ginger
  • 2 lemons
  • ½ a bunch of mint (15g)
  • runny honey, to taste
  • 1kg ice cubes

Method

  1. Place the tea bags into a large heatproof jug and top up with 500ml of boiling water.
  2. Finely slice the ginger (there’s no need to peel it) and peel strips of lemon zest from one of the lemons, then add to the jug with a few sprigs of mint, stirring in just enough honey to sweeten.
  3. Leave for 4 mins to infuse, stir well, then add 500g of ice cubes to cool the tea right down.
  4. Place another 500g of ice cubes (see tip) into a serving jug and strain over the infused tea, then squeeze in the juice of 1 to 2 lemons, to taste.
  5. Add the remaining mint and slice up and add any leftover lemon, then pour into glasses and serve.

Tip: Make the everyday that little bit more exciting with some jazzed-up ice cubes. Simply pick herb leaves, slice or peel strips of citrus zest and/or scatter berries into the compartments of an ice-cube tray, top up with boiled, cooled water and freeze!
