This Rooibos iced-tea drink, with honey and ginger, can be mixed in a pitcher for sharing – you can also pep it up with a splash of dark, spiced rum. See method

Ingredients

  • 4 rooibos tea bags
  • 2 tbsp runny honey
  • 3-4 handfuls of ice
  • 450ml (3/4pt) ginger beer
  • 6-8 physalis, to decorate (optional)

Method

  1. Brew the tea bags for 10 mins in 1 litre of just-boiled water. Squeeze and remove the tea bags. Stir in the honey and set aside to cool completely.
  2. When ready to serve, add the ice to a large pitcher, pour over the cooled tea. Stir and top up with the ginger ale. Pour into glasses and decorate with physalis, if liked.
