Ingredients

  • olive oil spray
  • 285g (9oz) healthy living fajita chicken mini fillets
  • 1 small onion, finely sliced
  • 1 clove garlic
  • x2-4 healthy living whole & white wraps
  • 1 can chopped tomatoes
  • 1 small can kidney beans
  • 25g (1oz) light mature grated cheese
If you don't have chopped tomatoes, chop up a tin of plum tomatoes instead

Method

  1. Preheat the oven to gas 4, 180°C, fan 160°C.
  2. Spray a nonstick pan with oil and heat over a medium heat. Add the contents of the Healthy Living chicken mini fillet pack, and cook the chicken for a few minutes on each side until browned and cooked through with no pink showing. Remove from the pan and set aside.
  3. Add the onion to the pan and cook for 5 minutes to soften, then add the garlic and cook for another minute. Return the chicken to the pan and stir in the chopped tomatoes and kidney beans. Bring to the boil and simmer for 5 minutes, until the mixture is thickened.
  4. Divide the chicken and tomato mixture between the Healthy Living wraps and roll up. Place in a baking dish, pour over any remaining sauce and top with the cheese. Bake for 10 minutes until the cheese is melted.
