Try something different with that pack of sausages in your fridge with this flavourful hoisin rice bowl. The sausages are broken into bite-sized nuggets to get them extra crispy, then fried with peppers and spring onions for a colourful, and speedy, stir-fry. See method

Ingredients

  • 300g Grower’s Harvest long-grain rice
  • ½ tbsp vegetable oil
  • 454g pack 8 pork sausages
  • 2 garlic cloves, finely sliced (optional)
  • 1 red pepper, thinly sliced
  • 100g bunch spring onions, green parts finely sliced, the rest cut into 3-4 cm chunks
  • 120g pack hoisin stir-fry sauce
  • sesame seeds, to serve (optional)
  • crushed chillies, to serve (optional)
  • 1 lime, quartered, to serve

Method

  1. Cook the rice to pack instructions.
  2. Heat the oil in a large nonstick frying pan over a high heat. Remove the sausages from their casings and add to the pan. Use a spatula to break them down into bite-sized nuggets and fry for 7-8 mins until golden.
  3. Add the garlic, if using, red pepper and spring onion chunks. Stir-fry for a couple of mins, then add the hoisin sauce. Rinse the sauce packet out with a little water and add to the pan as well. Simmer for a few mins.
  4. To serve, divide the rice among bowls and top with the sausage stir-fry. Sprinkle over sesame seeds and crushed chillies, if using, the remaining spring onions and serve with a lime wedge to squeeze over.
