This fiery, zingy homemade ginger beer is a real thirst quencher! Make the syrup ahead of time – you can even freeze it – then top with sparkling or soda water, ice, mint leaves and a little extra ginger for good measure! See method

Ingredients

  • 150g fresh ginger, coarsely grated, plus extra slices, to serve
  • peel and juice of 2 lemons
  • 130g golden caster sugar
  • sparkling water or soda water
  • ice cubes, to serve (optional)
  • fresh mint leaves, to serve (optional)

Method

  1. Put the ginger in a saucepan with lemon peel and juice, the sugar and 400ml water. Stir over a medium heat to dissolve the sugar, then bring to a simmer and cook for 15 mins or until reduced and thickened to a syrupy consistency. Set aside to cool completely
  2. Strain through a sieve, using the back of a spoon to squeeze all the syrup through. Put 50ml syrup in each glass, then top up with sparkling water or soda water. Serve with ice cubes, fresh mint leaves and extra slices of fresh ginger, if you like.
