Hot honey beef bowls recipe

These trendy beef bowls are all over social media for their high-protein credentials. They're super-easy to rustle up and the hot honey drizzle really offsets the rich mince. See method

Ingredients

  • 4 sweet potatoes (appox 700g), chopped into 2cm cubes
  • 1 tbsp olive oil, plus 1 tsp
  • 750g lean beef steak mince 5% fat
  • ½ 30g pack fajita seasoning
  • 1 ripe and ready avocado, sliced
  • 4 tbsp fat-free cottage cheese
  • 2 tbsp hot honey
  • chilli flakes, to serve (optional)

Method

  1. Preheat the oven to gas 7, 220°C, fan 200°C. Place the sweet potato on a baking tray in a single layer, drizzle over 1 tbsp olive oil and season with black pepper. Roast for 30-35 mins, tossing halfway. If you have an air-fryer, cook the sweet potato for 25 mins at 200°C. 
  2. Meanwhile, heat a frying pan to high and add the remaining 1 tsp olive oil. Add the beef mince to the pan and fry for 10-12 mins until browned and starting to crisp. Use a kitchen towel to mop up any juices in the pan or drain away any excess. 
  3. Sprinkle over the fajita seasoning and continue to cook for 4-5 mins. 
  4. To serve, divide the sweet potato and beef mince between the bowls. Top with the avocado and cottage cheese, drizzle over the hot honey and sprinkle with extra chilli flakes, if you like.

Tip: If cottage cheese isn't your thing, swap for Greek yogurt.
