This brownie recipe is really clever – it's rich, intensely chocolatey and fudgy, just like good brownies should be, but it's also high in fibre, thanks to the green lentils. There's no flour in this recipe either, making it a great gluten-free treat. Freeze squares and you'll always have a feel-good snack to hand! See method

Ingredients

  • 50ml vegetable oil, plus extra for greasing
  • 390g tin green lentils, drained and rinsed
  • 3 large eggs
  • 100g cocoa powder
  • 120g light brown soft sugar
  • 1 tsp vanilla extract
  • ½ tsp baking powder (use gluten-free if needed)
  • 1 tsp instant coffee granules dissolved in 1 tbsp boiling water
  • 60g dark or milk chocolate, chopped

Method

  1. Preheat the oven to gas 4, 180°C, fan 160°C. Grease and line a 20 x 20cm baking tin with nonstick baking paper.
  2. Put all the ingredients, apart from the chocolate, into a food processor and blitz until only just smooth. Stir in the chocolate, then spoon into the prepared tin and smooth with the back of a spoon.
  3. Bake for 20 mins. Remove from the oven and allow to cool on a wire rack before slicing and serving. To freeze, wrap the entire cooled tin in a layer of clingfilm and foil and freeze for up to a month.
