Fresh and zesty, this fibre-rich bean salad is bursting with black beans, chickpeas, sweetcorn, mango, avocado and tangy feta—tossed in a zingy lime and olive oil dressing. Ideal for barbecues, picnics or an easy lunch. See method

Ingredients

  • 1 x 400g tin black beans, drained and rinsed
  • 2 x 400g tin chickpeas, drained and rinsed
  • 325g tin sweetcorn, drained
  • 1 mango, diced
  • 220g pack Finest Piccobella tomatoes, halved
  • 1 large avocado, diced
  • 1 red onion, finely diced
  • 1 red chilli, finely sliced​
  • 15g fresh mint, leaves picked and finely chopped, plus extra leaves to serve
  • 15g fresh coriander, finely chopped, plus extra leaves to serve
  • 100g feta, crumbled

For the dressing

  • 40ml extra-virgin olive oil
  • 1 lime, zested and juiced

Method

  1. In a large bowl, add all the ingredients except the feta, along with some seasoning.
  2. Whisk together the dressing ingredients in a bowl or shake together in a jam jar with a little seasoning.
  3. Pour the dressing over the bean salad and toss together. Crumble over the feta to serve and enjoy.
