Ingredients

  • 200g basmati rice
  • 50g coconut chunks
  • 2 tsp cumin seeds
  • 1 lime, zested and juiced
Basmatic rice can always be swapped for long-grain

Method

  1. Soak the rice in cold water for 30 mins. Drain in a colander, then place over a pan of boiling water; cover, steam for 20 mins. 
  2. Peel the coconut chunks in to shavings. Dry-fry in a pan with the cumin seeds for 2 mins, stirring. Scatter over the rice with the zest and juice of the lime.
