Ingredients

  • 30g fresh flat-leaf parsley
  • 2 garlic cloves
  • 1 whole nutmeg, for grating
  • 1 lemon
  • 250g unsalted butter (at room temperature)

Method

  1. Finely chop the parsley on a board (stalks and all), then peel and finely grate over the garlic.
  2. Finely grate over half the nutmeg and half the lemon zest, place the butter on top, then mash and mix everything together with a fork to combine.
  3. Dollop the butter onto a large square of baking paper, then roll up and twist the ends to seal, like a Christmas cracker.
  4. Place in the fridge or freezer to firm up, then slice into 1cm-thick portions, rewrap and store until needed, ready to jazz up steamed greens, root veg, fish or bread.

Tip: Fresh rosemary and cranberry make a brilliant pairing for Christmas, but things like pesto, curry powder or paste, or sundried tomato and chilli, are also great for flavouring butter.
