Juicy vine tomatoes and red onions give a delicious brightness to your plate. This is a great side dish for picnics and barbecues, and can even double-up as a burger topping. See method

Ingredients

  • 1 red onion, halved and very finely sliced
  • 2 tbsp red wine vinegar
  • 1 tsp caster sugar
  • 300g vine tomatoes, sliced
  • 3 tbsp olive oil
  • 1 tbsp capers, rinsed and drained
If you don't have red onions, try using white, brown or spring onions

Method

  1. Mix the onion, vinegar, sugar and a pinch of salt in a bowl. Set aside for 10 mins.
  2. Arrange the tomatoes on a platter. Add the oil and capers to the onions; stir to mix well. Pour the mixture over the tomatoes to serve.
