How to make raw blueberry and chia seed jam

Kick start your January with this easy blueberry and chia seed jam. The natural sharpness of the blueberries, along with a little honey, lemon and vanilla, give a wonderful depth of flavour and the chia seeds swell up, giving a perfect consistency. Try dolloping the jam onto toast or a steaming bowl of porridge in the morning.

  1. Blitz the blueberries

    Leave a 350g pack of frozen blueberries out for 5 minutes to start thawing and then add them to a blender, along with 30g of chia seeds.

  2. Blend

    Blend for 10 seconds, until the mixture reaches a slushy consistency.

  3. Add ingredients

    Add 2 tsp of honey, the juice and zest of 1 lemon and 2 tsp of vanilla paste.

  4. Refrigerate

    Mix well with a spatula and spoon into a jar. Keep it in the fridge until you are ready to use it.

    A very healthy little spread indeed. Try it on porridge or a rice cake.
