How to make a Santiago rum spritz

Salted honey syrup pairs dreamily with aged Santiago de Cuba dark rum and bright, zesty lime juice. Top up with soda for a long, balanced cocktail with notes of tropical fruits and vanilla.

Ingredients

For the salted honey syrup

1 part honey
1 part hot water
pinch of salt

For the cocktail

50ml Santiago De Cuba 8 YO Rum
40ml salted honey syrup
20ml fresh squeezed lime juice
ice
soda water

To garnish

Half lime, squeezed

Method

1. To make your salted honey syrup mix 1 part honey, 1 part hot water and a pinch of salt, then mix.

2. Add Santiago De Cuba 8 YO Rum, salted honey syrup and lime juice to a tall glass, fill with ice then top with soda water and stir. Garnish with a your squeezed lime half and enjoy.
