Honey is made by bees from the nectar they collect from flowers. As such, the colour and flavour of honey varies depending on the location and type of flowers the nectar comes from.
Honey is available all year round.
Most standard honeys are a mixture of varieties from a range of countries. So look out for honeys that come from a specific destination. It can be bought as ‘runny' honey or ‘set' honey, which has been allowed to crystallise and is the easiest to spread on your toast.
Flavoured honeys are now more widely available and are made by bees collecting nectar from heavily scented flowers like orange blossom or lavender.
Honey doesn't need to be prepared in any way. After a time it can start to thicken, heating it a little will make it more liquid.
Keep in a tightly sealed container, in a cool, dark place.
Honey is really versatile and makes a great sugar substitute in baking. Try using it in place of sugar in cupcakes, it will add sweetness and keep your cakes really moist.
