Bagels are a firm favourite and make for a great lunch any day of the week. Lather with cream cheese and top with crispy bacon and char-grilled tomatoes. See method

Ingredients

  • 5ml (1tsp) vegetable oil
  • 4 rashers unsmoked back bacon
  • 1 tomato, thickly sliced
  • 2 plain bagels, halved
  • 40g (1 1/2oz) extra-light soft cheese
  • pinch black pepper

Method

  1. Heat the oil in a large non-stick frying pan and add the bacon. Cook for 2-3 minutes on each side until golden. Add the tomato slices and cook for 1 minute on each side until slightly charred and softened.
  2. Meanwhile, lightly toast the bagels under the grill for 1-2 minutes on each side.
  3. Spread the base of each bagel with the cream cheese and add a sprinkling of black pepper. Cut the bacon rashers in half and lay over the cream cheese. Top with the sliced tomato and remaining halves of the bagels. Serve immediately.
