This open sandwich makes a lovely lunch any day of the week. It's loaded with big, bold flavours and looks pretty too. The combo of nutty rye sourdough, creamy houmous, fiery beetroot and tangy blackberries is genius – don't forget the hot honey drizzle! See method
Ingredients
- 4 large slices Tesco Finest rye & mixed seed sourdough
- 200g pot reduced-fat houmous
- 180g pack Tesco Finest sweet & fiery beetroot
- 150g blackberries
- 20g wild rocket
- 4 tsp hot honey

Method
- Toast the sourdough and spread over the houmous.
- Thinly slice the beetroot and layer on top with the blackberries and rocket. Season and drizzle over the hot honey.
Tip: Swap the houmous for cottage cheese, if you like, and the blackberries for blueberries.
