Bramley apples are paired with sweet raisins in this warming apple cobbler recipe, a nice alternative to the traditional crumble, which only take 15 minutes to prep. Serve with vanilla ice-cream, single cream or for a healthier alternative, some natural yoghurt. See method

Ingredients

  • 100g butter
  • 1kg Bramley apples, peeled, cored and cut into large chunks
  • 100g raisins
  • 75g sugar
  • 1 lemon, zested and juiced
  • 200g self-raising flour
  • 1 tsp baking powder
  • 50g demerara sugar
  • 1 tsp mixed spice
  • 150ml milk
No self-raising flour? Add 2 tsp baking powder for every 150g plain flour

Method

  1. Preheat the oven to gas mark 6, 200ºC, fan180ºC.
  2. Melt 25g of the butter in a large pan and add the apples, raisins, sugar, lemon zest and juice. Cook gently for 5 minutes so the fruit just begins to soften then spoon into an ovenproof dish approx 20x25cm or similar.
  3. Melt the rest of the butter. In a large bowl sift the flour with the baking powder. Add the sugar, spice and melted butter then gradually add the milk and stir until smooth.
  4. Spoon 6-8 large serving spoonfuls on top of the apples and bake for 25-30 minutes until golden. Serve with thick cream or ice cream.
