  • 100g (3½oz) butter
  • 1kg (2lb) Bramley apples, peeled, cored and cut into large chunks
  • 100g (3½oz) raisins
  • 75g (3oz) sugar
  • zest and juice of 1 lemon
  • 200g (7oz) self-raising flour
  • 1tsp baking powder
  • 50g (2oz) demerara sugar
  • 1tsp mixed spice
  • 150ml (5fl oz) milk

  1. Preheat the oven to Gas Mark 6, 200ºC, fan180ºC.
  2. Melt 25g (1oz) of the butter in a large pan and add the apples, raisins, sugar, lemon zest and juice. Cook gently for 5 minutes so the fruit just begins to soften then spoon into an ovenproof dish approx 20x25cm (8x10in) or similar.
  3. Melt the rest of the butter. In a large bowl sift the flour with the baking powder. Add the sugar, spice and melted butter then gradually add the milk and stir until smooth.
  4. Spoon 6-8 large serving spoonfuls on top of the apples and bake for 25-30 minutes until golden. Serve with thick cream or ice cream.
