Have dinner ready in 20 with this quick broccoli and beef stir fry recipe. Tender beef is quickly stir-fried in a sticky orange and soy glaze, then tossed with noodles and plenty of veg for an easy healthy dinner idea. See method

Ingredients

  • 1 orange, zested and juiced
  • 2 tbsp soy sauce
  • 2 tbsp sesame oil
  • 1 tbsp sunflower oil
  • 5cm piece ginger, cut into matchsticks
  • 357g pack beef stir fry strips
  • 1 garlic clove, finely sliced
  • 1 red pepper, deseeded and thinly sliced
  • 250g Tenderstem broccoli
  • 150g fresh egg or straight-to-wok noodles

Method

  1. Mix together the orange zest and juice, soy sauce and sesame oil and set aside.
  2. Heat the sunflower oil in a wok or large frying pan over a high heat. Once the oil is sizzling, add the ginger and fry until crisp. Remove and set aside.
  3. Add the beef and garlic to the flavoured oil and stir-fry for 3-4 mins until browned. Remove and set aside.
  4. Add the red pepper and broccoli and stir-fry for 3-4 mins until tender. Add the orange soy sauce mixture and bring to the boil. Return the beef to the pan and add the noodles. Cook for 1-2 mins until the noodles are heated through.
