Ingredients

  • 1 tsp vegetable oil
  • 3 mixed peppers, deseeded and cut into 2cm strips
  • 2 large red onions, thinly sliced
  • 400g tin black beans, drained and rinsed
  • 2 large garlic cloves, finely crushed
  • 1 tbsp Schwartz Cajun Seasoning
  • 1 medium, ripe avocado
  • 1 lime, zested and juiced
  • 8 Tesco mini plain tortilla wraps
  • 1 Little Gem lettuce, finely shredded
  • 200g pot Tesco mild salsa
  • 50g Tesco Free From Coconut Oil Alternative To Mature Cheddar, coarsely grated

Method

  1. Heat the oil in a large frying pan over a high heat. Add the peppers, onion, black beans, garlic and Schwartz Cajun Seasoning and fry for 6-8 mins, tossing occasionally, until piping hot and starting to soften.

  2. Meanwhile, mash the avocado, lime zest and juice together until it forms a rough paste. Season with black pepper to taste. 

  3. Warm the tortilla wraps and fill with the little gem, spicy vegetables, smashed avocado, salsa and a sprinkle of vegan cheese.
