Cajun-spiced veg-stuffed fajitas recipe

Ingredients

  • 1 tsp vegetable oil
  • 3 mixed peppers, deseeded and cut into 2cm strips
  • 2 large red onions, thinly sliced
  • 400g tin black beans, drained and rinsed
  • 2 large garlic cloves, finely crushed
  • 1 tbsp Cajun seasoning
  • 1 medium, ripe avocado
  • 1 lime, zested and juiced
  • 8 Tesco mini plain tortilla wraps
  • 1 Little Gem lettuce, finely shredded
  • 200g pot Tesco mild salsa
  • 50g Tesco Free From Coconut Oil Alternative To Mature Cheddar, coarsely grated
If you don't have red onions, try using white, brown or spring onions

Method

  1. Heat the oil in a large frying pan over a high heat. Add the peppers, onion, black beans, garlic and Cajun seasoning and fry for 6-8 mins, tossing occasionally, until piping hot and starting to soften.

  2. Meanwhile, mash the avocado, lime zest and juice together until it forms a rough paste. Season with black pepper to taste. 

  3. Warm the tortilla wraps and fill with the little gem, spicy vegetables, smashed avocado, salsa and a sprinkle of vegan cheese.
