Try this deliciously comforting Sicilian cauliflower pasta for dinner tonight, it's wonderfully creamy and surprisingly healthy. Loaded with nutty roasted cauliflower and creamy cheese sauce with a hint of chilli making it the perfect dish for a cosy night in.

Preheat the oven to gas 7, 220°C, fan 200°C.

Divide the cauliflower into small florets, drizzle over a little oil and season. Roast for 20 minutes or until tender and golden.

Meanwhile, cook the pasta in salted water according to the packet instructions.

In a large frying pan, heat a little oil and add the chilli flakes and garlic and cook on medium until golden. Add the cauliflower, turn the heat up and cook for a couple of minutes. Pour in the white wine and cook until reduced slightly. Add the drained pasta and mix well. Stir in the pecorino cheese and parsley and serve.
