Ingredients

  • 1 large cauliflower
  • 350g (12oz) shell pasta
  • 1 tsp dried chilli flakes
  • 2 garlic cloves, crushed
  • 100ml white wine
  • 4 tbsp pecorino chunks
  • 2 tbsp parsley, chopped

Method

  1. Preheat the oven to gas 7, 220°C, fan 200°C.
  2. Divide the cauliflower into small florets, drizzle over a little oil and season. Roast for 20 minutes or until tender and golden.
  3. Meanwhile, bring a large pan of lightly salted water to the boil and cook the pasta according to the packet instructions.
  4. In a large frying pan, heat a little oil and add the chilli flakes and garlic and cook on medium until golden. Add the cauliflower, turn the heat up and cook for a couple of minutes. Pour in the white wine and cook until reduced slightly. Add the drained pasta and mix well. Stir in the pecorino cheese and parsley and serve.
