Ingredients

  • 12 chicken wings, tips removed
  • 3tbsp (45ml) olive oil
  • 3 lemons, 2 zested and juiced, 1 halved
  • 4 bay leaves
  • 1/2 red chili, finely chopped
  • 6 garlic cloves, left unpeeled
  • 2tbsp (30ml) honey
  • 1tsp (5ml) mustard seeds
  • 1tsp (5ml) coriander seeds

Method

  1. Preheat oven to gas 5, 190°C, fan 170°C. Take the wings and bend them apart backwards so that you can easily cut through the knuckle with scissors or a knife.
  2. In a large bowl, mix together the olive oil, lemon zest and juice, bay leaves, chilli, garlic, 1 tbsp honey, mustard and coriander seeds. Add the chicken wings and turn to coat thoroughly. Season to taste.
  3. Arrange the wings on a roasting tray lined with nonstick baking paper and roast for 30 minutes, turning every 10 minutes or so. Remove from the oven then drizzle over the remaining 1 tbsp honey and squeeze over the lemon juice from the halves. Return to the oven and roast for another 10 minutes, until cooked through with no pink showing. Serve immediately.
