Inspired by the classic Cosmopolitan cocktail, this grown-up take on jelly and ice cream is perfect for parties. It takes just 15 minutes to prepare, then leave it to chill for 4 hours until the jelly has set. See method

Ingredients

  • 135g pack strawberry jelly
  • 50ml triple sec
  • 100ml vodka
  • juice of 2 limes​
  • 200ml cranberry juice
  • 200g fresh raspberries
  • 6 scoops Tesco Finest vanilla ice cream
  • lime or orange zest
If you don't have any limes, try a lemon instead

Method

  1. Chop up the strawberry jelly and stir vigorously in a heatproof jug with 200ml boiling water until fully dissolved.
  2. Add the triple sec, vodka, lime juice and cranberry juice, and mix well.
  3. Divide the raspberries between serving glasses, then pour over the jelly mixture. Put in the fridge to set for at least 4 hrs or overnight.
  4. To serve, top each with a scoop of ice cream and finish with a twist of lime or orange zest.
