Impress your guests with this easy turkey meatloaf which serves 8. You can prepare this up to 12 hours in advance, then bake when you're ready to eat! See method

Ingredients

  • 1 large red onion, finely chopped
  • 2 garlic cloves, crushed
  • 500g turkey thigh mince
  • 80g dried breadcrumbs
  • 1 tbsp Worcestershire sauce
  • 2 tbsp tomato purée​
  • 1 tbsp finely chopped thyme
  • 1 tbsp finely chopped oregano
  • finely grated zest of ½ lemon
  • 1 egg, finely beaten
  • olive oil, for greasing

For the glaze

  • 150g ketchup
  • 1 tbsp honey
  • ½ tbsp cider vinegar
  • 1 tsp Tabasco
If you don't have red onions, try using white, brown or spring onions

Method

1. Heat the oven to gas 5, 190°C, fan 170°C fan. Put all the ingredients for the meatloaf besides the oil into a large mixing bowl and season well. Mix together with your hands, making sure everything is evenly distributed. Shape the mixture into a 25cm log and place onto a baking tray that’s been lightly greased with the oil. Bake for 45 minutes.

2. Meanwhile mix the glaze ingredients together. After the baking time, brush the glaze over the top of the meatloaf and bake for another 5 minutes until shiny and sticky.

Tip: Prepare the meatloaf up to 12 hours in advance and keep covered in the fridge, before roasting according to the method.
