Ingredients

  • 1tbsp olive oil
  • 1 onion, chopped
  • 1 large clove garlic
  • 1 tsp allspice
  • pinch ground cloves
  • 1tbsp tomato puree
  • 250g pork mince
  • 250g beef mince
  • 90g smoked bacon lardons
  • 2tsp dijon mustard
  • small bunch fresh parsley, leaves chopped
  • small bunch dill, leaves chopped
  • 1 large egg, lightly whisked
  • 80g tomato ketchup
  • 1tbsp worcestershire sauce
  • ½tsp brown sugar

Method

  1. Preheat your slow cooker on high (or according to manufacturers instructions). Heat the oil in a frying pan over a medium heat. Add the onion and sweat for 5 minutes. Add the garlic and spices and continue to fry for a couple more minutes.
  2. Spoon into a bowl and allow to cool. Add the remaining ingredients to the bowl. Season generously and add the egg. With clean hands scrunch to mix.
  3. Form into a loaf shape and place in the base of your slow cooker. Mix the glaze ingredients together and spoon this over the top of the meatloaf.
  4. Cook on low for 6 hours (or according to manufacturers instructions). Serve warm from the cooker with buttery jacket potatoes and braised red cabbage.
