Ingredients
- 2.5kg Maris Piper potatoes, peeled and quartered
- 4 tbsp olive oil
- 50g garlic butter
- 10 small sage leaves
If you haven't got any Maris Pipers, try using King Edward potatoes

Method
- Preheat the oven to gas 4, 180°C, fan 160°C. Boil the potatoes for 4 mins. Drain and return to the pan. Replace the lid and gently shake.
- Heat the oil in a roasting tin in the oven for 5 mins, then tip in the potatoes; roast for 20 mins. Give the tin a shake, increase the heat to gas 7, 220°C, 200°C and cook for 35 mins more or until golden.
- Meanwhile, cut the butter into cubes. 5 minutes before the end, dot the butter over the roast potatoes and scatter over the sage.
Tip: For a zesty twist, mix 1 tsp dried oregano and the zest of 1 lemon with a little sea salt. Scatter over the potatoes to serve.
