A tasty twist on classic roast potatoes. The lemon and bay leaves add an exciting flavour that is really delicious when paired with a seafood-based main.
Preheat the oven to gas 6, 200°C, fan 180°C.
In a large bowl, toss the potatoes with the lemon, bay leaves olive oil and some seaoning. Spread the potatoes out on a baking sheet in a single layer. Roast for 30-35 minutes, turning the potatoes halfway through cooking, until tender, golden and crisp at the edges.
