A classic Greek salad is a staple for your recipe repertoire. It's great on its own or as part of a bigger spread with grilled meat or veg. We like to serve it with toasted pittas for an easy lunch. See method

Ingredients

  • 25ml extra-virgin olive oil
  • ½ lemon, juiced
  • 1 red pepper, deseeded and finely sliced
  • 1 green pepper, deseeded and finely sliced
  • 4 salad tomatoes, sliced
  • ½ cucumber, deseeded and finely sliced
  • 1 red onion, finely sliced
  • 100g feta cheese, cubed
  • 100g black olives
  • dried oregano, to serve
If you don't have red onions, try using white, brown or spring onions

Method

  1. Lightly whisk the olive oil and lemon in a large bowl. Add the peppers, red onion, tomato and cucumber and toss together.
  2. Spoon into serving bowls and dress with the cubes of feta and the black olives. Season with a little oregano before serving.
