Ingredients

  • 3 ripe kiwis, peeled and diced
  • 1 green chilli, deseeded and finely chopped
  • 2 ripe vine tomatoes, finely chopped
  • ¼ red onion, finely chopped
  • 15g fresh coriander leaves, finely chopped
  • zest and juice of 1 lime
  • 1 tbsp extra-virgin olive oil

Method

  1. Combine the kiwis, green chilli, vine tomatoes, red onion and coriander leaves in a bowl.
  2. Grate over the lime zest and squeeze over the juice. Mix with the extra-virgin olive oil and season.

Tip: Make this up to 2 hrs ahead and keep, covered, in the fridge.
