  • 400g plain flour or 00 pasta flour, plus extra for dusting
  • 4 eggs

Method

  1. Put the flour in a mixing bowl, make a well in the centre and crack in the eggs. Use a fork to mix to a shaggy dough. Add 2 tsp water and use your hands to bring the dough together in the bowl, kneading to a firm ball.
  2. Tip onto a clean surface and knead for 10 mins (or 8-10 mins if using a dough hook) or until smooth and elastic, adding a little more flour only if it sticks; the dough will feel quite stiff as you knead. Cover with a tea towel or upturned bowl for 30 mins to 2 hrs before rolling and shaping.
  3. Divide the batch pasta dough into 4. Cover 3 pieces with an upturned bowl and flatten the fourth into a rectangle. Roll out to a rectangle of 30 x 35cm, less than 1mm thick; it should be an even thickness and look translucent. Dust with a tiny bit of plain flour if it sticks. Cut into 1cm strips and move to a lightly floured surface; set aside and repeat with the rest of the dough.
  4. Meanwhile, bring a pan of salted water to the boil. Add the tagliatelle and stir with a wooden spoon. Return to the boil; simmer for 3-4 mins, stirring occasionally, until just tender with a slight bite. Cooked tagliatelle will keep in the fridge for 3-5 days.
