Spicy, smoky and sweet, and very easy to make, this barbecue sauce is versatile and so delicious. Use on chicken thighs or wings (spoon over for the last 10 mins of cooking), with barbecued veg or even tinned beans. See method

Ingredients

  • 50ml ketchup
  • 25ml red wine vinegar
  • 1 tbsp dark brown soft sugar
  • 3 tbsp clear honey
  • 2 tbsp reduced-salt soy sauce
  • 1 tbsp Worcestershire sauce
  • 3 tbsp harissa paste
  • 1 tbsp American yellow mustard

Method

  1. Put all the ingredients in a saucepan over a medium heat. Bring to the boil, then reduce the heat to low and simmer gently for 5-6 mins until thick and glossy. Use immediately or ladle into a sterilised jar* and store in the fridge for up to 1 month once opened.

*To sterilise glass jars, wash in hot, soapy water and rinse well. Dry in the oven for 15-20 mins at gas 1, 140°C, fan 120°C until hot and completely dry. Boil metal lids and rubber seals for 10 mins, then leave to dry

Tip: To make this vegetarian, use 1 tbsp soy sauce and 1 tsp balsamic vinegar in place of the Worcestershire sauce. This recipe is easily doubled, you may just need to simmer for a little longer until the sauce is thick and glossy.
