Ingredients

  • 4 large baking potatoes
  • 1 tsp olive oil
  • 50g salted butter
  • 2 x 420g tins Stockwell & Co baked beans in tomato sauce, heated
  • 80g mature Cheddar cheese, grated
  • 1 tsp fresh chives, finely chopped
If you haven't got any jacket potatoes, try using sweet potatoes. Cooking times may differ.

Method

  1. Preheat the oven to gas 6, 200°C, fan 180°C. 
  2. Wash the potatoes well and pat them dry with kitchen towel. Prick the potatoes with a fork a few times. 
  3. Rub the potatoes with the olive oil and season with a little salt. Put on the top shelf of the oven. Bake for 1 hr-1hr 15 mins depending on the size of the potato until the skin is crisp and the inside is soft. 
  4. Remove and make a cross in the centre of each potato, season and add a knob of butter. 
  5. Top each potato with some hot baked beans and a sprinkle of cheese. 
  6. Finish with chives and some freshly ground black pepper to serve.
