My parents moved to India for 6 months for work and my father picked up some tips while there and brought back this recipe.
Roughly chop onion and gently soften. Add chopped Lamb.
Add Garlic, chilli, coriander, garam masala, ginger, turmeric and cinnamon. Cook on low heat for 1 minute.
Add tomato and yoghurt and coconut milk.
Simmer tor roughly 1 hour or untill lamb tender. If using chicken it will take roughly 30 mins.
Dry blocks of coconut milk are better than liquid. If using liquid be aware not to add too much or it will turn into a soup. Extra yogurt can be used for a quick yoghurt dip. Fresh coriander on top is also beautiful.
