Ingredients

  • 350g spirali pasta
  • 50g butter​
  • 50g plain flour
  • 1 tsp smoked paprika
  • 700ml semi-skimmed milk
  • 175g extra-mature Cheddar, grated
  • 100g grated mozzarella

For the topping

  • 30g panko breadcrumbs
  • 30g Parmesan, finely grated
  • 90g Tesco Finest Spanish chorizo ring, grated
If you don't have any Cheddar, try using another hard cheese

Method

  1. Preheat the oven to gas 6, 200°C, fan 180°C. Cook the pasta in a pan of boiling water for 2 mins less than the pack instructions. Drain, reserving a small mug of pasta water, and set aside. 
  2. Meanwhile, melt the butter in a pan over a medium-high heat, then stir in the flour and paprika. Whisk to create a thick paste, then cook for 1 min, stirring. Season with black pepper and whisk in the milk, a little at a time, until you have a thick, smooth sauce. Take off the heat and mix in the cheeses, then stir until smooth. 
  3. Stir in the cooked pasta along with a splash of the pasta water, then tip into a baking dish. 
  4. Scatter the breadcrumbs, grated chorizo and Parmesan over the pasta. Bake for 20 mins until bubbling and golden on top. Serve with garlic bread and salad, if you like.
