Method

  1. Preheat the oven to gas 4, 180 ̊C, fan 160 ̊C. Lightly grease a deep nonstick 25 x 35cm roasting tin with 1 tsp oil. Unroll the filo pastry sheets and, using scissors, cut into 3cm squares. Scatter into the prepared tin to separate, then drizzle with the remaining oil and toss to coat. Bake for 30 mins, tossing every 5 mins, until lightly golden, then transfer to a similar-sized baking dish.
  2. Meanwhile, put the milk, coconut milk, condensed milk, sugar, vanilla, cinnamon, coconut and raisins in a large saucepan over a medium-low heat. Heat gently to dissolve the sugar, then bring to the boil and simmer for 5 mins, stirring to prevent it sticking or burning, until well combined and thickened slightly.
  3. Preheat the grill to high. Pour the milk mixture over the cooked pastry shards, then scatter over the nuts. Set aside for 5 mins to thicken, then grill for 3-5 mins or until the top is golden brown. Set aside to cool for 5-10 mins before serving (it will continue to thicken as it rests).
