These little omelette bites make ideal baby weaning food, suitable from 7+ months stage*, but toddlers will love them too. Protein-rich with some hidden veg, these are great for a quick and tasty lunch or even a picnic. You can even air-fry them if you want or bake them in the oven. See method

Ingredients

  • vegetable oil, for greasing
  • 6 large eggs
  • 2 tbsp whole milk (or your baby’s usual milk)
  • 1 courgette (about 220g), coarsely grated and excess water squeezed out
  • 25g Cheddar cheese, coarsely grated (optional)
  • 1 tbsp finely chopped basil (optional)
If you don't have any Cheddar, try using another hard cheese

Method

  1. Heat your air-fryer or oven to 200°C, fan 180°C, gas 6. Line your air-fryer with nonstick baking paper or if cooking in the oven, grease and line a 20cm cake tin. Whisk the eggs and milk together, then stir in the courgette, cheese and basil, if using. Pour the mixture into the air-fryer or the cake tin.
  2. Cook in the air-fryer for 8-10 mins until golden on top and firm to the touch. If using an oven, cook for 20-25 mins until golden on top and firm to the touch. Remove from the air-fryer or oven and allow to cool in the tin completely before slicing into 15 squares. The bites will keep on the fridge in an airtight container for up to three days.

Tip: Swap the veg for steamed chopped broccoli, roughly mashed cooked peas, or add flaked salmon or tuna for extra protein. Swap the herbs to anything you like – chives work particularly well.

*This recipe is appropriate for babies progressing through the weaning stages, from around 7-9 months of age. Babies may be gradually moving towards 3 meals a day and ready to enjoy a broader variety of textures and flavours. When weaning your baby, introduce allergenic foods one at a time and not before 6 months.
