For the ultimate summer thirst quencher, this refreshing watermelon cocktail hits the spot. The dryness of the sparkling rose cuts through the sweetness of the fruit, making it a perfect palate cleanser before a rich BBQ feast.
- Cut 2 thin wedges of watermelon for the garnish, leaving the rind intact. Chop the remaining flesh into chunks, discarding the seeds. Put the watermelon pieces in a food processor and blitz until smooth. Pour the liquid through a sieve into a measuring jug – you should get about 250ml (8fl oz) of liquid, enough for 2 cocktails.
- Add plenty of ice to 2 large wine glasses. Pour half the Aperol or Campari into each glass, followed by the watermelon and the sparkling rosé. Garnish each drink with a watermelon wedge, stir once and serve immediately.
