Watermelon spritz recipe

For the ultimate summer thirst quencher, this refreshing watermelon cocktail hits the spot. The dryness of the sparkling rose cuts through the sweetness of the fruit, making it a perfect palate cleanser before a rich BBQ feast.

  1. Cut 2 thin wedges of watermelon for the garnish, leaving the rind intact. Chop the remaining flesh into chunks, discarding the seeds. Put the watermelon pieces in a food processor and blitz until smooth. Pour the liquid through a sieve into a measuring jug – you should get about 250ml (8fl oz) of liquid, enough for 2 cocktails.
  2. Add plenty of ice to 2 large wine glasses. Pour half the Aperol or Campari into each glass, followed by the watermelon and the sparkling rosé. Garnish each drink with a watermelon wedge, stir once and serve immediately.
