Ingredients

  • 425g (15oz) watermelon
  • 100ml (3 1/2oz) Aperol or Campari
  • 200ml (1/2pt) sparkling rosé
  • ice cubes

Method

  1. Cut 2 thin wedges of watermelon for the garnish, leaving the rind intact. Chop the remaining flesh into chunks, discarding the seeds. Put the watermelon pieces in a food processor and blitz until smooth. Pour the liquid through a sieve into a measuring jug – you should get about 250ml (8fl oz) of liquid, enough for 2 cocktails.
  2. Add plenty of ice to 2 large wine glasses. Pour half the Aperol or Campari into each glass, followed by the watermelon and the sparkling rosé. Garnish each drink with a watermelon wedge, stir once and serve immediately.
