Try this quick and easy vegetarian recipe for a stunning, seasonal Easter side dish. Ready in just 15 minutes, it pairs crunchy purple sprouting broccoli with a creamy parsley and lemon butter.

  1. Bring a large pan of water to the boil and, once simmering, add the broccoli and cook for 3-4 minutes until just tender. Drain and set aside.
  2. Melt the butter in a large frying pan over a medium-low heat and add the sliced garlic. Fry for 1-2 minutes before adding the broccoli to the pan. Heat through, then remove the pan from the heat and stir through the parsley and lemon zest. Season to taste and serve with a drizzle of olive oil.
