Quick pickled vegetables are so easy to make, and this red cabbage is no exception. It's a great side to serve with cold cuts at Christmas and makes a fab and festive edible gift. See method

Ingredients

  • 2 tsp fennel seeds
  • 200g red cabbage
  • ½ red onion
  • 1 eating apple
  • 1 lemon, zest and juice​
  • ½ tsp fine salt

Method

  1. Toast the fennel seeds in a pan over a medium heat for 4-5 mins until fragrant. Meanwhile, core and finely slice the red cabbage and red onion. Grate the apple (or slice into matchsticks).
  2. Toss everything together with the lemon zest, juice and salt. Pack tightly into a clean 500ml jar and leave for at least 30 mins before eating. Keep in the fridge for up to 2 weeks.
