Blend or crush the raspberries until they are a smooth purée. Have a taste and if they seem quite tart, stir in some icing sugar.

Pour into a sieve and press through all the juice using the back of a ladle, leaving the seeds behind.

Pour into champagne flutes, filling by about one quarter, then very slowly top up with sparkling wine, stirring gently as you pour.

Serve straight away.
