This veg-packed tagine recipe is lightly spiced and suitable for weaning your baby from 10+ months stage*. It can be blitzed with a blender if needed for a finer texture, or just lightly mashed with a fork to suit your little one. It's perfect for batch-cooking and can be frozen – see our tip below. Ingredients

  • ½ tbsp olive oil
  • 1 onion, finely chopped
  • 2 garlic cloves, crushed
  • 450g (2 small) sweet potatoes, peeled and cut into 2cm chunks
  • 400g tin chickpeas, drained and rinsed
  • ½ tbsp ground cumin​
  • 1 tsp ground coriander
  • 1 tsp smoked paprika
  • 1 tbsp tomato purée​
  • 30g dried apricots, finely chopped
  • 400g tin chopped tomatoes
  • 1 tbsp finely chopped coriander
  • 300g couscous
  • ¼ lemon, zested
If you don't have chickpeas, you can use any tinned bean in water

Method

  1. Heat the oil in a large frying pan over a medium-high heat and fry the onion for 7-8 mins until soft, then add the garlic and cook for another 1 min. Stir in the sweet potatoes, chickpeas, spices and tomato purée and cook for a further 1 min before stirring in the apricots, chopped tomatoes and 250ml water.
  2. Bring to a gentle simmer, then pour into a slow cooker and cook on high for 3-4 hrs or medium for 5-6 hrs until tender. Alternatively, cook in the oven at gas 3, 170°C, fan 150°C for 2½ hrs until the sweet potatoes have mostly fallen apart, then stir in the coriander. 
  3. When ready to serve, put the couscous into a heatproof bowl and pour over 450ml boiling water. Add a lid and allow the couscous to absorb the water for 5 mins, fluff up with a fork and stir in the lemon zest before serving with the sweet potato stew.

Tip: This dish will keep in the fridge for up to 3 days.

Freezing and defrosting guidelines

Freeze in portions with the couscous mixed in or separately for up to 3 months, then defrost when needed for quick dinners.
