  • 50ml olive oil
  • 1 lemon, zested and juiced
  • handful mint leaves

Method

Making a quick infused oil is a super easy way to add plenty of flavour to simple veg dishes. Try these smashed peas with mint and lemon oil for a fresh side ready in just 15 mins.

  1. Boil the frozen peas for 6 mins. Drain and return to the pan. 
  2. Meanwhile, put the olive oil and the pared zest and juice of a lemon in a pan over a low heat; leave to infuse for 5 mins. 
  3. Mash the peas, then strain and mix in the oil. Top with mint leaves and the lemon zest.
