Cook ahead to intensify flavours with this braised red cabbage recipe, a great festive side that is easily prepared and pairs well with your favourite roast meats. See method

Melt the butter in a large, lidded pan. Add all the ingredients, season and stir. Cover and cook over a very low heat for 1 hr 15 mins, stirring occasionally, until the cabbage is really tender.
Add a little water to the pan if it begins to look a bit dry (we added 50ml). Remove the cinnamon stick and check the seasoning. If making ahead, leave to cool, then store in an airtight container in the fridge for up to 3 days, or freeze for 3 months. Reheat until piping hot throughout.
