Add some Spanish flair to a simple side dish with smoky peppers, chickpeas and caramelised red onion alongside sweet peas, for a colourful and easy side ready in just 10 minutes. See method

Ingredients

  • 1 red onion, sliced
  • 2 tsp olive oil
  • 2 tsp smoked paprika
  • 400g frozen peas
  • ½ x 285g jar chargrilled peppers,drained and sliiced
  • 1 x 210g tin chickpeas, drained
  • 50ml water
  • 15g coriander, chopped
If you don't have red onions, try using white, brown or spring onions

Method

  1. Fry the red onion in 1 tbsp olive oil for 10 mins until soft; add the smoked paprika for the final 2 mins. 
  2. Meanwhile, boil the frozen peas in salted water for 6 mins; drain and add to the onion with the chargrilled peppers, chickpeas and some water. Heat until piping hot. Stir in the chopped coriander.
