  • 100ml Gordon’s Pink Gin
  • 200g strawberries, hulled and quartered
  • ¼ lemon, juiced
  • handful ice cubes
  • 100ml soda water
  • 2 thyme sprigs

Method

  1. In a jug, muddle the gin with the strawberries and lemon juice until the strawberries are all squashed and have released their juices.
  2. Fill 2 highball glasses with ice and strain the muddled strawberries into them. Top up with soda water and garnish with a thyme sprig.
