Ingredients

  • 3 tbsp strawberry jam
  • 100ml white rum
  • 180g ice cubes
  • 2 limes, 1½ juiced (40ml), ½ sliced
  • 2 tsp sugar syrup (see below)
If you don't have any limes, try a lemon instead

Method

  1. Put all the ingredients in a blender, apart from the lime slices, and blitz until smooth. Divide between 2 chilled Martini glasses.
  2. Garnish each with a lime slice: make a cut from the middle to the edge of the lime slice, then bend the lime forward and back from the cut to create a ‘wave’ effect; thread onto a cocktail stick and rest on the side of the glass.

How to make sugar syrup: This can be bought ready-made, but you can also make your own. Put 100g caster sugar in a pan with 50ml water. Heat gently until the sugar has dissolved, then bring to the boil, remove from the heat and allow to cool. Store in an airtight sterilised* jar or bottle. Will keep in the fridge for up to 3 weeks.

*To sterilise glass jars, wash in hot, soapy water and rinse well. Dry in the oven for 15-20 mins at gas 1, 140°C, fan 120°C until hot and completely dry. Boil metal lids and rubber seals for 10 mins, then leave to dry.
