  • 3 x 150g packs tendersweet carrots, scrubbed
  • 2 tbsp olive oil​
  • 5g thyme sprigs, leaves picked
  • 100g feta
  • 1 lemon, zested

  1. Preheat the oven to gas 5, 200°C, fan 180°C. Put the carrots in a large roasting tin, toss with 1 tbsp oil, season lightly and arrange in a single layer. Roast for 25 mins until tender and golden.
  2. Scatter over the thyme leaves, toss to coat, then return to the oven for 2 mins. Tip out onto a serving platter and crumble over the feta. Scatter with the lemon zest and drizzle with the remaining 1 tbsp oil to serve.
