Ingredients

  • 600g carrots, sliced
  • 1 tbsp olive oil
  • 10g whole mint leaves
  • ½ red chilli, halved, seeded and sliced
  • ½ lemon, zested and juiced
  • 50g feta, crumbled

Method

  1. Preheat the oven to gas 6, 200°C, fan 180°C. Put the carrots in a baking tray, drizzle with olive oil and roast for 25-30 mins, until lightly golden. 
  2. In a serving dish, mix the carrots with the mint, chilli, zest and juice of the lemon and feta.
