These simple tofu brochettes are super easy to cook and make a lovely light meal. Coating the tofu in honey and olive oil and adding a crisp sesame seed crust brings both flavour and texture to this easy tofu recipe. See method

Ingredients

  • 1 x 396g pack plain tofu, drained
  • 50ml (1 3/4fl oz) olive oil
  • 2 tbsp runny honey
  • salt
  • pepper
  • 4 tbsp sesame seeds
  • 150g (5oz) spinach
  • wooden skewers, soaked in water for 30 minutes

Method

  1. Heat the grill to hot.
  2. Whisk together the olive oil and honey. Thread the cubes of tofu onto skewers, fitting 4 to each brochette and brush with the olive oil and honey and season well. Coat the tofu cubes in the sesame seeds so that they are covered evenly.
  3. Grill for 6-8 minutes until golden brown on the outside. Arrange the spinach on serving plates. Place the tofu brochettes on top of the spinach and serve immediately.
